Here is the instructions for changing the language: (this instruction is an example for METAL GEAR & METAL GEAR 2: Solid Snake, but I think it's similar for other)
==================== To change to english (in game) First Screen (EULA): Hit the top tile, then hit the back button to return to the first screen. Then choose the right tile to agree (top=confirm, left=disagree, right=agree). Main Screen: Go Down x3 to select the 4th of 6 tiles (options). Options Screen: Select the first tile to go to the Languages screen. Languages Screen: Select top tile for english.
