I have both 7 and 11 clean version installed. I only use 11 for the purpose of testing and so far I haven't found a good reason to make a permanent switch.
You don't have either option. In reality you have the options of using an outdated OS and not being able to run programs you want to or not. Your security and privacy (which are basically the same thing anyway) were forfeit a long time ago.

You really need to upgrade man. Windows 10 ain't that bad tbh. And you can disable most of the online features if you want.
