I did try it and i must say i am dissapointed.

It seems that everything buildable is unlocked right from the start, so you furnish your Saloon and then just let it run, getting some decisions that are resolved by skills and dice throws.

Only thing to do about the Saloon would be to furnish the upper level when you made enough money.

Maybe a nice way to kill some time but nothing that you would play for longer.

you skipped like 90+% of the game... I mean you didn't even read description it seems as almost the entire thing is ignored by your post.
You know events + relationship + town building around+ being a character + creating new serving stuff+etc... is a massive focus ... clearly.

glad to hear there no pointless grind to unlock stuff that is just a mechanic too often forced and assume there maybe still is and you just have not gotten that far (idk and by you saying maybe guess you don't know).

Were you even able to fit and get all bordellos, opium dens, high stakes gambling rooms, handcrafted bars, pianos, chandeliers, and diamond dust mirrors at one time at start??? Some how doubt that.
