It works, you just need to
Extract all the file into a folder.
Rename DEFGRID.cue into DEFGRID.iso
Open the now .iso file using your chosen iso reader
Extract all the files inside the iso into a folder
Install the game using the setup.exe
Enjoy
(you can open the setup inside the iso reader but for me it fails to install)

I can't install this. I have several disc-mounting software and have tried extracting all the files before attempting installation - but it appears that the installation package itself is borked.

Not true. Folder comes with an iso file that you mount and install the game.
Either your anti virus deleted that file or your unzip got corrupted.
(you can open the setup inside the iso reader but for me it fails to install)
