"Contains Mature content" I'm assuming it refers to the tragedies and horror of war, and how these soldiers cope with psychological breakdown all the while trying to survive under grim circumstances with civilians dying all around them.....
The way i see it, it's the other way around. Every other game of this type is a girl x boy game. The number of gay games isn't even close to being 50/50 with girl x boy games, not by a long shot. Example, there's like 10-15 gay games that just circle around when looking for them online, while boy x girl, there's thousands.
If what you mean is 'We can choose as either Female MC or Male MC', i can recommend a few to you?. Idk if you've tried this, but, here we go:

Just search that up). -Our Life (Fully free, still on itch.io, and of course the gender is up to you). -Gakuen Club is worth try too (The MC set as female tho) -Yandere Love Chains of Fate (is still on-going and in development, still early and you can get it on itch.io for free. If you like something more dark, of course you can give it a try. For now, the MC is still set as Female, but the Author said they will consider to give the option for Male and NB too).
Actually, much of Visual Novels which uploaded on itch.io are free and worth to play (Graphics, Characters and storylines are created carefully) -if we want to compare it to the ones on steam-. Y'know, since most VNs in steam are either fully-straight up porn or lacking in choices/stories. You might want to consider roaming around itch.io if you looking for flexible Visual Novels :).
