24-36 hours is a long time. I don’t think anyone argues that machine harvesting can cause bruising but it also allows you to pick large amounts in a short amount of time. The bruising is mitigated if you can process quickly. Run this study again with a 4-8 hour time from picking to processing. Then also look at how many tons of olives were harvested in each process. If olives are not processed until after 24-36 hours have passed there is a scheduling problem.
