At the end of the season the harvest is always there... miracle of some sort? The truth is that there is way more olive oil, or olives coming from other parts of the country that end up being milled as Tuscan. Everybody knows, no one does anything about it. I do not even have a mill, and I receive daily calls from companies offering olives during the milling season from Puglia. The same happens via any communication means from Turkey or Tunisia. In Tuscany it is much easier and much cheaper to buy olives than growing your own. The same applies to ready made oil. Buy at 3-4 euros and sell at 9 - do it for a few million bottles and you have a business. There are very large bottling plants, mills and cooperatives that are regularly caught with their hands in the Jam, but the news never break outside small second tier newspapers.
