Im sorry to saw but if you harvest in November and with those bags you are not getting quality is just Quantity and for me that isnt extra-virgin olive oil.
To get quality in a favourable year is easy. However, watch out to not mess it up in the mill or in the subsequent steps.
One thing is sur: In a year with unfavourable conditions (olive fruit fly and others), you'll never get a sadisfactory quality if you put your olives in bags like those shown in the picture...
