Skitch looks great, but only works for Apple products. For folks on Windows, I'd like to recommend two things I use.
For simple screenshots, I like Greenshot, which is free. A feature that I particularly like is that you can set a delay, which is useful when you need time to open a menu or something before the shot is taken. The native Windows Snipping Tool doesn't let you do that - but a lot of software and websites won't keep dropdown menus open when you switch to another tool.
When I want to write step-by-step instructions with screenshots, Clarify is my friend. It isn't free, but it's inexpensive. It also allows you to set a delay of a few seconds, instead of taking the screenshot instantly.
Both Greenshot and Clarify come in Mac and PC versions.
